The story
Yellow mustard seed is milder, slightly sweet, and nuttier than black. Same farm, same wooden ghani, same cold press. Nothing is bleached, deodorised or chemically extracted, and it passes through a single mesh before bottling. If black mustard oil is too sharp for your kitchen, or you are cooking for children and elders, this is the one to start with. It still tastes of mustard. That is the point.
Who should skip it
If you are making achaar or Bengali fish, use the black one. This is too mild for that job.
If you want a completely neutral oil, mustard is still mustard. It tastes of something.
