Black mustard oil is the pungent one. It is what Bengali fish and a proper aloo bhaja are built on, and it is the one that catches the back of your nose when you open the bottle. Yellow is milder and slightly sweet, easier for everyday sabzi and for anyone still getting used to mustard oil. Most kitchens end up wanting both. Keeping the two side by side is also the fastest way to learn what the pungency is actually doing in a dish, because you can cook the same thing twice and taste the difference. Both are pressed cold in a wooden ghani and bottled unrefined.
