A2 desi cow ghee, made the way it was made before machines. Sahiwal milk from our own farm is set to curd overnight, churned by hand in a wooden bilona, then cooked slow on a wood fire. It comes out grainy and deep gold. The smell reaches the next room. One spoon on hot rice will explain it faster than we can.

The story
Sahiwal is an indigenous breed. Its milk carries the A2 form of beta-casein and not the A1 form found in most crossbred dairy milk. That is a fact about the protein, not a health claim, and we make none. What we can tell you is what we do with the milk. Our own cows, milked twice a day. Curd set overnight, churned in a wooden bilona, cooked on a wood fire. It takes close to 30 litres of milk to make one kilo of this ghee. Nothing is added at any step, and nothing is bought in from outside.
Who should skip it
If you want a neutral fat that disappears into food, this is not that. It tastes of milk and fire.
If you are dairy-free, skip it.
